I love snickerdoodle cookies, and waffles are a definite favorite in this house. And what better way to combine these two favorites than by coming up with the perfect snickerdoodle waffle recipe? These incredible snickerdoodle waffles are made even better when paired with butter and your favorite syrup. I have a regular waffle recipe that is also delicious, but I can’t help but gravitate toward this one; it’s just so good!
The recipe makes 6 waffles that freeze beautifully and reheat perfectly in a regular toaster – whether refrigerated or frozen. Of course, you could also reheat them in the microwave, but I love a little crunch, so the toaster is my go-to. These snickerdoodle waffles are super simple to make, so I’m going to jump right in to the recipe!
Ingredients
- 1.5 cups flour
- 1/2 cup cornstarch, slightly heaping
- 4 teaspoons baking powder
- 3/4 teaspoon salt
- 1/4 cup sugar, scant
- 1 tablespoon ground cinnamon
- 2 eggs
- 2 cups milk, scant
- 1/2 cup oil
- 1 tablespoon vanilla
Directions
- Heat waffle iron.
- In a medium bowl, mix flour, baking powder, salt, sugar, and cinnamon together.
- In a separate bowl, scramble eggs, milk, oil, and vanilla together.
- Combine flour mixture and egg mixture.
- Once waffle iron is hot and waffle batter has been fully combined, pour batter into greased waffle iron (mine takes somewhere between 3/4 and 1 cup of batter and makes four 3.5″x4″ waffles at a time) and allow time to cook.
- Serve immediately with butter and syrup, or butter and cinnamon sugar (3 tablespoons sugar + 1 tablespoon cinnamon) to make them even more snickerdoodle-like!
I may be a bit biased, but I don’t know how anyone could not want to make these! They’re so fluffy, with the perfect amount of crunch on the outside, and the flavor is out of this world! I top mine with equal parts of butter and syrup that I mix together and heat up in the microwave, and it’s perfect.

This recipe was updated 2/24/21. The original recipe called for 2 cups of flour and no cornstarch. The updated version makes a crisper waffle that I’ve found my family – including myself – prefers.
